Zucchini Frittata Roll is a delicious oven-baked stuffed omelette roll, a fresh and genuine Italian main/second course that will add a touch of color and imagination to your summer table!

The recipe for this (I like to call it โ€œstuffed egg rollโ€) is simple and quick to prepare.

This dish is ideal for making children consume eggs and vegetables but also for those who do not like or cannot eat fried food, especially for those with a low-calorie diet, because cooking in the oven without oil makes it more light, digestible and with less fat.
Because it is cooked in the oven, is also ideal for those who have very little time available and want to do something tasty, it can be prepared largely in advance and put it in the oven 10 minutes before serving to melt the cheese.
With my recipe youโ€™ll discover a new and even more delicious way of preparing omelette: the filling is an appetizing mix of flavorsome ingredients that will add a special touch to this savory roll. Once ready it can be enjoyed also cold and is perfect served as part of a buffet or on the go!

To make this frittata roll more consistent and rich I added finely grated raw zucchini to the eggs. As in baked zucchini meatballs or the savory pie of zucchini and ricotta. Cooking takes place in the oven and the result is a light but dense omelette: you just have to use a baking sheet lined with parchment paper. Once the omelette is out of the oven, it is important to roll it up while it is still hot and let it cool rolled up and wrapped in parchment paper. In this way you will prevent it from breaking when you stuff it and roll it up permanently.

Ideas for stuffing

As for the filling, I chose a classic filling perfect for the summer: havarti and cooked ham. But you can also use grilled vegetables, smoked salmon, tomatoes and tuna. In short, you can stuff the zucchini roll with any other type of salami or cheese! Itโ€™s really your choice!

Creativity, play with colors!

Another idea you can have is to play around with the mixture! By saying that I mean that you can add spices like turmeric, paprika or other vegetables rather than zucchini only! For example you can add grated carrots and fill the roll with salmon and cream cheese or you can add tomato paste or boiled spinach to the eggs and so on! You can really free your imagination and add whatever you like the most!

Zucchini Frittata Roll

Description

Zucchini Frittata Roll filled with cooked ham and havarti cheese is a cold, easy and very tasty dish. Ideal as an appetizer, in a buffet, for aperitifs with friends or as a second course. But also prepare it as a to-go to the office, to the beach or on a picnic. It will be a fresh, light and tasty meal by giving you the necessary proteins.

A simple and very delicious recipe, which will surprise you from the first bite.
You can stuff it with the ingredients you like best, such as salami, prosciutto or even smoked salmon and fresh cream cheese. You will be spoiled for choice!

For a 13x18 baking sheet pan

Instructions

  1. Start by washing the zucchini. Then trim them and grate them with a grater with large holes.

    At the end, squeeze the zucchini with your hands to remove the vegetation water.

  2. Gradually place the mince in a bowl and at the end enrich it with: eggs, grated cheese and a pinch of salt. Mix with a spoon and pour the mixture of the frittata roll into a rectangular pan lined with parchment paper.

  3. Cook in a hot, ventilated oven at 400ยฐF for about 25 minutes.

    When it's ready, take it out of the oven and place it in a new parchment sheet. Remove it from the pan, lifting it from the parchment paper. Let it cool, a couple of minutes.

  4. When it's cold but still warm, turn it over (so the part with the film will go underneath) and remove the parchment paper.

    Spread the surface with the cream cheese and place the cooked ham on top.

    Roll up the zucchini omelette, forming a roll.

  5. Help yourself with the transparent film, form a candy and transfer the EGG ROLL WITH ZUCCHINI in the refrigerator, to firm up.

  6. Before serving the ROLL, remove the film, place it on a serving plate or cut it into slices.

If you prefer to eat your zucchini frittata roll cold you should remember to leave it at room temperature for at least 10-15 minutes before tasting it.ย
