Canazzo Palermitano

Canazzo Palermitano, also called canazzu, is a Sicilian side dish based on stewed vegetables in a pan.

The term "canazzo" in Sicilian dialect means "done quickly, in an inaccurate way" and already from here we realize the ease of preparation of this dish.

In fact, the vegetables are cooked all together in the pan, without any particular preparatory preparations. A few minutes and the vegetables are already cooking.

This time I used the vegetables that I had in hand, in this case potatoes and bell peppers. But you really can add whatever vegetable you want like eggplants, zucchini etc.

Ingredients
  • 2 1 onions (julienne cut)
  • 2 1 potatoes
  • 4 1 bell peppers (mixed colors)
  • 1 pinch salt and pepper to taste
  • 2 tbsp extra virgin olive oil
  • 1 1 fresh mint to taste
  • 1 1 fresh parsley to taste
Instructions
  1. To prepare the canazzo you have to start from the vegetables, which are the main element of this recipe. Start with the onions, which will be cleaned and then reduced into slices or, if you prefer, coarsely chopped.

  2. Peel, wash and then cut the potatoes into cubes.

  3. Now clean the peppers. You will have to deprive it of the stalk, seeds and internal filaments and then reduce it into cubes after washing it also internally.

  4. Now you can move on to pan cooking. Add a drizzle of extra virgin olive oil and sautee' for a couple of minutes. When the onion starts to wilt you can add the potato cubes. Let it go for a few minutes.

  5. Add the peppers and let it sauté for a couple of minutes.

  6. Season with salt and cover with the lid. Cook for a few minutes, stirring occasionally.
    As soon as necessary, add some water or hot vegetable broth, so as to facilitate the cooking of the vegetables.

  8. When the vegetables are softened, cover again with the lid and then continue to cook over medium heat until all the vegetables are well cooked.

  9. Transfer everything into a large bowl and add fresh parsley and mint. To be enjoyed cold because it will release its flavor even more!

Note

Sweet and sour canazzo

At the end of the preparation, if you want, you can add a sweet and sour condiment so as to make the Sicilian canazzo even more tasty and good.

Then add 4 tablespoons of white wine vinegar and 2 tablespoons of granulated sugar. Let go another couple of minutes and then let it cool before serving the dish. It will be even better!

You can prepare this dish with the seasonal vegetables you have available, so in any season of the year. The result will be a dish that is still easy to prepare but really delicious!

The quantities of the various ingredients may vary according to your needs or tastes. So adjust accordingly.

The Sicilian canazzo can be kept in the refrigerator for 2-3 days closed in an airtight container.
