Bresaola al carpaccio is a tasty and colorful cold dish, which can be served as an appetizer or, also as a second course. It is not actually a real recipe, since we essentially limit ourselves to assembling the ingredients and forming an emulsion with which to season the bresaola carpaccio.
However, given that there is always a need for tasty ideas and quick and light recipes that can solve lunch or dinner, I thought I would still offer you this bresaola appetizer which is very popular in my house in the summer. The bresaola carpaccio with rocket and Parmigiano Reggiano flakes is prepared with thin slices of bresaola and seasoned with extra virgin olive oil and balsamic vinegar. To complete the dish, a little rocket, flakes of Parmigiano Reggiano or Grana Padano and optional lemon juice. If you want, you can enrich this bresaola appetizer even more by adding some mozzarella or olives. In short, a very simple recipe but which, if well presented, also makes a great impression!

Bresaola al carpaccio

  1. To prepare the bresaola carpaccio with rocket and parmesan, start by placing the slices of bresaola on each plate, overlapping them slightly.

  2. Wash and dry the rocket, break it into pieces with your hands and arrange it in the center of each plate.

  3. Complete this bresaola appetizer with the parmesan flakes, a drizzle of oil and a splash of balsamic vinegar Modena. Add lemon juice (optional)

  4. Enjoy cold as appetizerย 

Note

To obtain the parmesan flakes there is a special tool linked above from my amazon store, but if you don't have it, you can obtain a similar result with a potato peeler.

This appetizer of bresaola, rocket and parmesan is also excellent for filling light and tasty sandwiches: season it with a drizzle of oil and arrange the bresaola carpaccio with rocket and parmesan as per the recipe.
