In summer a nice Caprese salad is what you need to enjoy a fresh and satisfying dish. Today I reveal another face of mozzarella to prepare an equally tasty summer appetizer: stuffed mozzarella roll.
Did you know that by microwaving the mozzarella with its conservation water and adding more water you can bring the dairy product back to a malleable consistency? This way you can work and roll it out with a rolling pin before filling with rocket, ham and cluster tomato. A tasty recipe to surprise your guests with an original and tasty aperitif.

Description
Easy, quick and light recipe, perfect for summer! To be served as a finger food appetizer or as an appetizer, or, more simply, as a fresh and light second course!

Start by placing the mozzarella in a bowl (choose one slightly larger than the mozzarella) with its conservation water and add more water until the mozzarella is completely covered. Then put everything in the microwave at 900W for 7 minutes, to melt the mozzarella.
Meanwhile, wash and thinly slice the copper tomato.
Prepare the rocket and the slices of raw ham.
Once the mozzarella is softened transfer it with a spoon onto a sheet of baking paper on which you will place another, then roll out the mozzarella with a rolling pin. Try to obtain a thin rectangle a few millimeters thick, measuring approximately 35 x 25 cmThis operation must be done as quickly as possible, as mozzarella tends to solidify quickly and would therefore be difficult to roll out.Gently remove the top sheet of baking paper, add salt and fill the resulting rectangle with slices of ham, then season with slices of ย tomato and arugula; finally add another layer of sliced raw ham. Roll everything up, initially using the baking paper, tightening well as you wrap the filling
Once ready, let the roll rest in the refrigerator wrapped in baking paper for at least 30 minutes. After this time, you can remove the baking paper and cut it into rounds of about 2.5 cm (so you will get 12). Your stuffed mozzarella roll is ready to be served as a tasty appetizer!

STORAGE
The stuffed mozzarella roll can be stored in the refrigerator for up to 2 days. Freezing is not recommended.
SUGGESTIONS
Give space to your imagination to fill your mozzarella roll in increasingly original and tasty ways! An example? Form a base of raw ham, cut the melon with a potato peeler and add some chopped fresh mint! If you don't have a microwave, you can heat the mozzarella in a saucepan with the same amount of water indicated in the recipe, until it has softened.
