Sofficini are delicious fried pastries filled with ham and cheese.

Very popular in Italy, these pastries are an excellent dinner for kids and adults on the go!

The soft dough is simply based on milk, flour and a pinch of salt and butter; it is cooked on the stove for a few seconds and once cooled, it is divided into pieces from which discs are obtained; which once filled to taste, close like half-moons!
Just like you do with Panzerotti.


For the filling you can give free rein to your imagination! The fun is choosing a filling of your choice: tomato and mozzarella (called pizzaiola), spinach and bรฉchamel, ham and cheese, mushrooms, vegetables, cured meats, but also everything you have available at home! Sofficini are an excellent fridge emptyer!
In the notes, I have included many variations with which you can fill them! Once breaded you can cook your puffs in the oven, in a pan, or air fryer! Believe me they are delicious in every way! Crispy on the outside, soft on the inside, the homemade Sofficini will literally sell like hotcakes!

Description

Sofficini are the delicious crunchy crescents filled with stringy cheese and tomato sauce, ham and spinach produced by Findus, loved by children! Very popular in Italy.
Today I give you the perfect recipe to prepare homemade Sofficini just like the bought ones! In a few moves and with many fillings! Genuine, healthy, cheap and amazingly good! Perfect for storing and freezing! So you can have some for dinner and whenever the children ask for them!

Instructions

For the pastry dough:

  1. First of all, place the milk, salt and butter in a saucepan.
    Bring to the boil. When it fills with bubbles, add the flour in one go. Stir well for a few seconds until you obtain a dough that almost sticks to the pan, compact and soft.

  2. Transfer the sofficini dough to a work surface and leave to cool.

  3. Remove pieces of dough weighing approximately 60/70 g from the dough and roll them into balls.

    When they have cooled, roll out each ball with a rolling pin, forming a disc of approximately 10 โ€“ 12 cm.

  4. Prepare the Filling:

    Slice the cheese into cubes or the cooked ham or cured meats into strips. Mix the peeled tomatoes with oil and salt.

  5. Continue forming all your homemade pastries by filling them and close them like dumplings!

    Help yourself with a fork!
  6. Dip them first in the egg and then in the breadcrumbs.

  7. Cook your puff pastries as you prefer:

    In a pan, adding a drizzle of extra virgin olive oil, turn them 2 times.

  8. You can choose to cook them in the oven with a drizzle of oil for about 25 minutes at 400ยฐF, taking care to turn them once!
    Or even better in an air fryer for 20 minutes 400ยฐF!

Note

Freeze homemade Sofficini before breading!
Simply defrost them overnight in the fridge and the next day proceed with the egg bath and breading and they'll be ready to be fried!

Store in the fridge for 3 days ready to cook. Already cooked, you can keep them for 1 day, but it is better to reheat them to have a stringy filling!

Other delicious fillings: ricotta and cooked ham with the addition of stringy cheese; Stir-fried vegetables with the addition of drained mozzarella; minced meat and cheese; cured meats and cold cuts with mozzarella.
