Potato Salad (or parsley potatoes) are a simple and delicious side dish, boiled potatoes cut into cubes and seasoned with oil, white vinegar and lots of parsley. The parsley potatoes are served strictly cold and are perfect in the summer! A very easy recipe that will allow you to prepare, in a very short time, a very tasty side dish to be prepared in advance and kept in the fridge. An ideal accompaniment for both meat and fish main courses.

Preparing potatoes with parsley is really easy. To make the recipe to perfection, pay attention to the cooking of the potatoes (boiled or steamed), the less water they absorb the better! Once cooked, let them cool completely, just so they donโ€™t crumble when you mix them. As for the dressing, use a lot of parsley and chop it finely. Once ready, let the potatoes flavor a few hours before serving them, they will be delicious! In addition to being a side dish, I also prepare them as a cold appetizer for the buffet.

To make them, just boil the potatoes and season them with oil, white vinegar, salt, parsley plus a clove of garlic if you want to make them tastier.

It is useless to deny it in the summer seasoned boiled potatoes are a dish we cannot give up, because cold potatoes are also good, cut into small pieces or mashed as I did in my recipe of boiled potatoes with peppers and raw ham, they act as a side dish or unique dish based on the ingredients used, in short, a real goodness!

  1. Wash the potatoes and put them in a pot with cold water. DO NOT add SALT to the water as it makes the potatoes absorb more water.

    Cover with the lid, bring to the boil and cook until you can pierce them with a fork. Drain the potatoes and immerse them in cold water to stop the cooking. Alternatively you can steam the potatoes.

  2. Once cold, peel the potatoes and cut them into cubes. Add the chopped parsley to the potatoes, add the salt and pepper, a generous drizzle of olive oil and white vinegar.

  3. Even if the potatoes seem a bit dry to you, don't add more oil because they will absorb it all. I recommend adding a little more before serving. Cover with plastic wrap and place in the fridge for a couple of hours before serving.
