Chicken And Zucchini Gratin is a low carb meal that can easily be made in less than 15 minutes using an air fryer!
This recipe came to my mind while I had some leftover chicken breast and thought about creating a meal that was light yet tasty at the same time.
All you have to do is gather all the ingredients in a large bowl and make sure to season everything with your favorite spices.
If you like to use the air fryer this is the recipe for you because it is really easy and fast make ahead meal!
Cooking Method
I personally love to cut the cooking times with the air fryer! It is such a life safer especially when you come home from work and you want to prepare something quickly but healthy at the same time!
This is the cooking method with the best results, and if you donโt own an air fryer yet I recommend one in the link below which I find myself using a lot and have been using for almost 2 years now!
However you can definitely make this in the traditional oven, times may vary but the results will still be great! Just make sure you donโt put any aluminum foil on your food because it is highly toxic!
Spices
With this recipe you really can be free to add whatever spices you like! If you like it spicier, definitely try adding paprika powder or chili! Itโs really your choice.
I personally like to go lighter on the spice and if I want spicier I add tabasco sauce or even spicy mayonnaise!

Cook at 400F for 20 minutes, then add the breadcrumb mix and cook for additional 10 minutes.

You can definitely season with teriyaki sauce at the end or with glazed ponzu sauce!
